Gundog Hilltops Riesling 750ml Nebbiolo uncharred shiraz casksWe treated the fruit in much the same way as our other Rieslings; only taking the first 500 litres per ton of free run juice, which we then fined and racked clean, prior to fermentation with a neutral yeast (DV10). Despite taking a similar winemaking approach, the resulting 2024 Hilltops Riesling is a departure in style relative to our previous incarnations from the Canberra District, and we are particularly pleased with the outcome.
